The Bing Box is chef Diana Zadlo’s love letter to ice. After more than 15 years working in the food world as a chef, recipe developer, and food stylist, she launched the project (originally called That’s it! ) to explore the deep global culture of ice desserts through a nostalgic American dairy dip lens. Diana was awarded Best Dessert Pop-Up in Best of Nashville, a recognition that helped cement The Bing Box as one of the city’s most exciting seasonal dessert projects.

The idea has deeper roots, though. Back in 2015, Diana opened Bing Bing Shaved Ice inside Hot & Cold in Nashville, one of the city’s earliest dedicated bingsu concepts. Nearly a decade later, she returned to the idea in summer 2025, reviving The Bing Box as a pop-up. The response was immediate and overwhelming, proving Nashville was more than ready for another round of finely shaved ice.

As a Filipino chef who has lived in Hawaii and Japan, a military brat traveling from place to place, Diana has long been fascinated by the depth and creativity of shaved-ice traditions across the Asian diaspora—from halo-halo to kakigōri to bingsu. The Bing Box blends those influences with the nostalgic spirit of American roadside dairy dips: bright flavors, cold treats, and a little bit of summer magic.

In January 2026, Diana and her partner took the next step and purchased a 1988 Cushman Vanster, which they’re currently outfitting to become the ultimate shaved-ice mobile, bringing The Bing Box to neighborhoods, events, and hot Nashville days wherever it is needed most.
